Flavors of Fall Event, Regatta Bar, Cambridge, MA


12 Restaurants participated in the 2012 Flavors of Fall, presented by BostonChefs.com held at Regatta Bar in the Charles Hotel, Cambridge. 

Proceeds benefited Cambridge-based organization, The Possible Project which "utilizes entrepreneurship to inspire young people who have untapped potential, empowering them with the skills required to achieve enduring personal and professional success--skills like leadership, professionalism, self-confidence, teamwork, and resilience."

People of all ages can enjoy good food.  This cute baby proves you're never to young to appreciate fresh herbs!

 
Noir Bar

Noir Bar served two remarkably, simple seasonal 'tea punch' cocktails



Belly Wine Bar served amazing lamb Merguez cooked table side and served with a creamy aioli.



Lamb Merguez: spiced so perfectly that the aioli was a bonus.  They really stood well alone!
Belly Wine Bar also served tender braised tripe with which chef seemed to have a love-hate relationship.  The offal awful smell while cooking is well worth the end product!



Harvest served tender Cavatelli with silky butternut squash and delicious housemade chicken sausage & sage.

Upstairs on the Square served apple chip with quince and duck proscuitto.  Unfortunately, I missed out on this dish.

Loved the crunch on the cromesquis (a French hors d’oeuvre of deep-fried, battered pork) and I am becoming quite a fan of brown butter powder too!

Local rabbit terrine, pistachio shortbread and currant mostarda

Amelia's:
I didn't get to sample Amelia's Tratorria's root vegetable and wild boar stew with house rolled potato cavatelli.

I also missed out on Henrietta's Table house smoked duck on pumpkin bread with cranberry chutney.
 
West Bridge:
The s'more were too sweet to distiguish the layered flavors.  The presentation however was unique and beautiful.

 
 Sandrine's Bistro served a maple creme brulee.



Beer and wine were served as well.



All attendees received some great swag bags with EVOO, an etched glass, certificates, etc.

Dewar's + Drambuie Presents: Fall Harvest Dinner+ Cocktail Pairing @ Church Restaurant, Boston

Church's new talented chef John Rush prepared a lovely Fall Harvest 5 course meal at a private dinner back in November.  Beverage Director Adam Grushey and Drambuie Brand Influencer, Tara "BlackDahlia" Feely,  paired each course with the perfect cocktail.

First course: 

A silky, creamy oyster on the halfshell topped with crisp, earthy shallots and a Meyer lemon foam.  Chef Rush creatively mounted the oyster upon a heap of coarse sea salt which gave the illusion of packed snow while serving the same purpose.  The wait staff wisely warned patron not to eat it!

First Pairing:
Drambuie 15 year, a Speyside Malt blended with Original Drambuie.  It has more sweet honey notes than spiced, herbaceous notes Original Dram is known to carry.  Quite nice and paired will the cool, creamy mollusk with citrus notes lingering from the foam.




Second Course:
A brightly colored salad with green, leafy, peppery arugula, tender roasted beets, bright blood orange supremes, fennel, crunchy, sweet candied walnuts, and dollops of smooth, creamy goat cheese.


Second Pairing:
A classic "Blood and Sand" cocktail (Circa 1922). 
The blood orange in this cocktail really complimented the salad.


Third Course:


The crust on the halibut didn't quite deliver the crispness I was hoping for, but the halibut itself was delicious.  The mild fish was moist and cooked perfectly.   
The halibut was set on braised cippollini onion and a garlic-parsley puree.  The sweetness of the cippollini onion detracted from the mildness of the fish.  It through the balance of the dish off where a more savory preparation could have saved it.

Third Pairing: 
Fallspice Roy

Fouth Course:
Beautiful tender, brown sugar-braised short ribs served with a sweet corn and apple roasted bread pudding cake, roasted baby carrots and parsnips.  The rich cabernet glace was perfect!

This dish felt like the Holidays!





Fourth Pairing:
Heather and Honey

Fifth Course:
Boozy dessert: A blonde brownie Sundae with rich dulce de leche ice cream, almond praline, and butter "scotch" sauce.
 
 
Fifth Pairing:
Maple Leaf cocktail

With over 25 years of experience in the food industry, owner and chief food taster, Joe Faro, has finally transformed his vision to create a Tuscan villa in Southern New Hampshire into a reality. When Faro first opened the award-winning Tuscan Kitchen in November 2010, his concept was simple, combine the freshest ingredients with time-honored preparation to create a truly incredible culinary experience. Applying this same concept to his latest project, Faro’s new Tuscan Market will offer an extensive array of imported products, a large selection of specialty prepared foods, a 65-seat café, and specialty cooking classes.

Set aside a cobblestone piazza, Tuscan Market’s impressive Italian-imported décor complete with a working fountain and pergola with classic columns will make guests feel as though they are walking through an authentic Italian marketplace. While guests peruse the enormous selection of products and ingredients available for purchase, the tantalizing aromas of freshly prepared foods will be what really draws them in. From freshly baked breads and homemade pizzas and Panini, to handmade pastas and slow-cooked sauces, customers can bring home a truly authentic meal from start to finish.

Tuscan Market doesn’t end with the savory. Guests with a sweet tooth will have more than enough to select from with a dedicated dessert section boasting a wide assortment of Italian pastries and gelato being spun daily in the gelateria within the Tuscan Market café

Located within the Tuscan Market itself, visitors can take a break and relax at the Tuscan Market café, a large 65 seat café area surrounded by flat screen TV's, while enjoying coffee, espresso or grab a bite to eat. For something sweet, an authentic homemade gelato machine imported from Italy will feature over 24 different flavors of the creamiest gelato offered this side of Italy. To dine alfresco, the 50-seat patio will be open for lunch or a late afternoon snack.

Guests will be able to hone their own culinary skills at the Scuola Culinaria where Tuscan Brand’s Corporate Executive Chef Edward Payne will lead cooking demonstrations and classes. WHAT: From Wednesday, October 31st, 2012 to Sunday, November 4th,
2012, the Olé Restaurant Group will celebrate all things mole with a special “Mole Menu.” Mole is a sauce that is a staple of Mexican cuisine and a culinary symbol of the country’s “mestizaje,” or mixed heritage, due to the types of ingredients it contains and the legends surrounding its origin. Moles come in various flavors and can contain up to 30 individual ingredients, with chile peppers as the most common component.

The “Mole Menu,” available at Olé Mexican Grill in Cambridge, MA and Zá½¹calo Back Bay, located in Boston, MA, will feature four distinct incarnations of the sauce: mole negro, mole coloradito, mole mancha manteles and mole verde oaxaqueño. Mole negro is called the “king of mole” for its complexity. It is seasoned with indigenous Mexican ingredients like guajillo chiles, Mexican oregano and marjoram, and will be paired with turkey. Originally from Oaxaca, mole coloradito, made with cloves, oregano, peppercorns, canela and an inconspicuous combination of spices will be paired with beef. Mole mancha manteles, literally named “tablecloth stainer” because of its deep red color, will be served with lamb shank. Originally from Puebla, this fruity mole combines sweet notes with spice for a captivating contrast. Or, for those looking for a vegetarian option, mole verde oaxaqueño, made with Mexican herbs like hoja santa and epazote and served with vegetables, is one of the best known moles and a truly soulful food.
